Recipe Notes

Spiced Cherry Belgian Ale

Mash @ 147degF for 60min.

60min boil

I did not use candi syrup for this recipe. Instead I used 2lbs of a semirefined sugar like piloncillo, turbonado, demerara etc.... Add the sugar shortly before flameout so that it fully dissolves into the wort.

Add 1 teaspoon of Ceylon (true cinnamon) and 1 drop of almod extract at the end of the boil.

Ferment with one of the Abbey Ale strains of yeast. (I used WLP530 last year) I let the beer sit in primary for at least 3 weeks.

Rack onto 3-5lbs of sweet cherries and 3-5lbs of sour cherries for secondary fermentation. Leave in secondary for 30 days.

Age a minumum of 4 months.

This beer gets better and better each month after that.

This one was such a big hit with my friends, neighbors and family last year that I'm brewing 15 gallons of it this year!
