Mash at 154* for 60 minutes.

Add 8oz of Pure Cocoa (I use Hershey's from the baking isle at the grocery store) after racking to secondary. Let sit on the cocoa for 10-14 days. Longer will impart for chocolate flavor.

To boost the chocolate flavor, add 2oz of chocolate extract before bottling, or in the secondary if you keg. Don't add directly to the keg, as it will settle to the bottom and you'll get 1 pint that tastes like chocolate milk, and nothing in the rest of the keg. I think it tastes just as good (albeit a little less sweet) without the extract, and I always have a hard time locating the extract locally. If you have a Harry's or a Whole Foods nearby, they can order it for you, or you can purchase online.
