Ferment

- Primary 28 Days @ 70 F

- Consider Splitting Batch for 7 Day Chili Pepper Addition

Tasting Notes

- Subtle bacon-like smoky nose

- Punch of rye & hops going down

- Dry finish (actually 1.012)

- Smoky aftertaste lingers for a few minutes after taste

- After a few months, seems a touch too bitter...Consider dropping part of the bittering hops to get the IBUs into the 30s

- Chili pepper version much better; Touch of heat comes in the aftertaste
