Mash all grains (approx 6 lbs.) in 7.5 quarts of water at 154F for 1 hour. Mash out at 168F. Bring to a boil and follow hop additions schedule. Add 4 lbs. DME at last 15 minutes of boil.
18g EKG 5%AA @ 90min
12g EKG @ 30min
39g Cascade 7%AA @ 0min
(With a one hour hot whirlpool. Or change the cascade to 30min and change the 30min EKG to 45min if you do not use a whirlpool).
Pitch at 62F, let rise to 66F in 24-48 hours. Let rise to 70FC over course of further fermentation.
Add 1 oz. oak chips to fermenter immediately and remove after 7-8 days.
