Single Infusion, Mash In Add 11.25 qt of water at 165.4 F to get a Mash Temp of 153.0 F 60 min. Sparge to get about 6G so that after boil-off you have around 5G.
Fermented in primary for about 3 weeks at 65F, needed blow-off tube in 6.5g carboy with only 5g beer! Secondary for about a week before kegging and carbonating to 2.5 volumes CO2. Feel free to bottle condition also. Increase fermentation temp if you want more fruity/estery flavors. I try to keep mine a little more clean most times.
Scored well in NHC - Gold certificate for a score > 40/50.
