Recipe Notes

Mash for 60min at 150F to increase fermentability. Draw off 6.1 gallons of runnings, boil for 60 minutes. Use kettle finings (whirlfloc or Irish moss) at 15 minutes. Allow beer to sit in primary for at least 3 weeks, then transfer to keg. Pressurize to 2.3-3.1 volumes of CO2 (12PSI @ 35F), and lager at 35F for at least four weeks before tapping and serving.
