Recipe Notes
Step mash:
Add grain (wheat) and 2lbs DME to 5qts water. Raise the temperature to 111F and hold or 15 min. Raise temp to 144 - 152F for 45 min. Raise the temperature to 170° F and sparge to collect 3 gallons.
Boil wort 60min, all hops at beginning.
Lightly boil remaining 4 lbs DME separately for 15min in 1.5 gallons water.
Boil 2 gallons of water and chill to be used for top-off.
Add grain wort to DME wort and use chilled water to reach 5.5 gallons volume.
Pitch yeast below 70F
Ferment at 62F / 14 days
Raise temp to 66F / 1-2 days
Bottle with 3/4+ cups corn sugar.
