Recipe Notes
Step mash, as follows:
1. Infuse 6 gallons of 90F water into 70F grist (~2.5 qts/lb) to reach 86 F mash temp. Hold at 86F for 30 minutes.
2. Pull 30% of mash as thick mixture, and heat, stirring constantly over flame, to 144F. Hold thin mash mixture at 86F, and thick mash mixture at 144F, both for 30 minutes.
3. Mix thick mash mixture back into thin mash mixture to acheive a combined mash temperature of 104F. Hold mash at 104F for 30 minutes.
4. Heat mash directly to 162F, and hold for 30 minutes, or until conversion.
5. Heat mash directly to mash-out temperature of 172F.
6. Lauter/sparge to obtain wort.
Boil for 60 minutes. Cool and ferment at 64F with rehydrated yeast.
