Adjuncts (Boil for last 60 min of 90 min total boil):
1.5 lb Honey
1/4h pound Molasses
Extras (Added to the last 10 minutes of the boil):
3 Tablespoons ground Allspice.
Adjunct sugards will bring the ABV up to around 9. These will ferment slowly so I primary for 2 weeks, then bottle condition for a minimum of an additional 2 weeks. It will be drinkable at this point, but its always best to save a six-pack and let it condition for another two months...then drink one bottle every month thereafter so see how this ages & changes.
