Recipe Notes
Prepare 1.5L yeast starter using WLP051 yeast 3 days prior to cooking. Ferment starter 24 hours and give vessel a good shake every hour or so. Decant 2 days.
On brew day, prepare 6.2 gallons of water with 1/2 of a campden pill.
Steep specialty grain in 2 gallons of treated water.
2 lbs Light DME (60 min)
.75 oz Chinook hops (50 min)
.75 oz Simcoe hops (30 min)
3 lbs Light DME (15 min)
1.5 lbs Can (Beet) sugar (15 min)
.75 oz Cascade hops (15 min)
1.5 teaspoons Irish moss (15 min)
5 teaspoons yeast nutrient (15 min)
.5 oz Cascade hops (0 min)
Cool wort to 70*F. Then, add yeast and aerate for 2 minutes.
Primary: 10 days
Secondary: 10 days
Bottle aging: 4 weeks
Expect OG=1.058, SRM of 7.0, IBU of 70.0, FG of 1.015
