Recipe Notes
Season 4-5 lbs real pumpkin seasoned w/ allspice, cinnamon and nutmeg and bake until soft and caramelized. Mash pumpkin.
Add pumpkin pulp to the mash.
Mash at 154 for 60 mins, 1.33qt/lb. Use rice hulls to prevent stuck sparge (optional).
Boil for 60 mins.
Add 1 oz hops at 60 min and 1 oz at 15 min.
1 oz. sweet orange peel (15 mins)
2 whole cinnamon sticks (5 mins)
1 tsp fresh grated ginger (5 mins)
1 tsp allspice (5 mins)
1/2 tsp nutmeg (5 mins)
Primary 4-6 weeks, secondary optional. Ferment 62-68 degrees
