This is my Magic Hat #9 Clone, in case you were wondering. Mash in at 152*F. Ferment around 60-62*F ambient. After about 3-4 days of fermentation, perform a diacetyl rest by warming up the fermenter to about 65*F to get rid of the buttery popcorn taste provided by the ringwood yeast. If bottling, add 3/4 cup of corn sugar to 2 cups of water, bring to a boil. If you have close to 5 gallons, add 6 oz of apricot flavoring (you're probably going to have to buy two 4-oz bottles of extract), and the sugar solution to the bottling bucket. If kegging, just the extract. Add the beer on top, then bottle or keg.
Substitution notes: On their website, Magic Hat has this listed at 11.20 plato - this recipe is set up a little higher, but I don't always get 75% efficiency. Therefore, you might get a beer slightly stronger than 5.1% ABV, but not likely higher than 5.5%. Also, Apollo hops are not easy to find, so I subbed Citra. I've also made this beer with Wyeast 1968 London Ale, and it tasted great.
