Recipe Notes

1/2 yeast nutrient last 15 minutes of the boil.

Single step infusion mash. 5.2 gallons of water @174f; stabalize at 154f for 60 minutes. Sparge slowly with 175f water. Collect 6 gallons of wort. Add..6 oz of Perle hops to 60 minute boil.

Cool wort to 75f, pitch yeast and aerate heavily. Allow wort to cool to 65f over next few hours. When evidence of fermentation is apparent drop the temperature to 52f. Hold until fermintation is complete, approximately 10 days. Transfer to seconday fermentation. Condition for 2 weeks at 42f then keg. Age for 4 weeks.
