Recipe Notes
Make a 2 liter starter 36 hours in advance.
Mash @ 158 degF for 1.5 - 2 hrs.
Runoff 2.5 gallons for the heavy ale....run off a 2nd time in a separate kettle to get a smaller beer.
Take 1 quart of first running wort and place in a saucepan, bring to boil and bring to a caramelized state. Return back to wort then top off with 1 gallon hot water.
Boil time is 90 minutes. Add water if necessary to keep volume going to end with 2..5 gallons.
Chill wort to 58 degF then aerate well and pitch active yeast. Ferment @ 60 degFuntil finished (14-21 days) then rack to secondary and lager beer for 6 weeks at 36 degF or so.
Re-yeast with 1/2 pak of Safale 04 or other neutral yeast and wait 3 days, then rack, prime and bottle. Carbonate to 2.2 vols of CO2.
Store cool and enjoy.
