"The crystal and special roasted malts merge well together to yield soft caremel and raisin notes. These flavors will evolve gracefully as the beer ages.

Step mash with a 10 minute rest at 113 F (45C), a 10 minute rest at 144F (62C), a 15 minute rest at 154F (68C), a 15 minute rest at 162F (72C) and a 5 minute rest at 169F (69C). Boil for 90 minutes adding corn sugar at the beginning of the boil. Add orange peel and liquorice root for final 15 minutes of boil. Ferment 76F - 84F (24C-29C) Condition for 2 weeks at 28F (-2C).
