Add 3lbs of Wildflower Honey at 15m during boil

Which should raise the OG to 1.105

90+ boil (down to 5.5 usable gallons)

Know your boil-off to get the hop additions on target

With my boiloff I had to boil for 3 hours (lots of sparge to get my pre-boil OG of 1.087

Mix the two yeasts into a BIG starter...around 2L each then decant to just the yeasties.

Primary for 4 weeks @ 70*

Secondary for 4 weeks @ 70*

Age for 6 months
