mashed at 122 for 15 mins then 154 for 90 mins. 4 gal sparge in 2 batches. Ferment for 3 weeks at 68F. Then bottle and 2 weeks later enjoy. Best consumed young. Tastes very good after only 1 week in the bottle.
Crush the coriander. I just put it in a ziplock and beat it with a can of food for a bit.
We tasted this side by side with a St Bernardis Wit and I swear this one was better. Though that is definitely opinion.
