Recipe Notes
Mash in at 122 for 10 min, then raise temp to 148 for 90 min. Target 1.5 quarts per pound or 15 quarts. Mash out at 168 and sparge slowly with 170 degree water. Boil for 90 min adding hops at approprite times, cool, aerate and pitch yeast. Ferment at 50 for two weeks, transfer to secondary and ferment at 33 for 2-4 weeks. Plan to add some additional yeast at bottling if bottle conditioning.
