Recipe Notes
Mash either decoction (preferred) or step-infusion. Dough-in at 105°F for 10 minutes, followed by a protein rest @ 122°F for 10 minutes followed by a conversion rest @ 156°F for 60 minutes. Calcium carbonate should be added to the first decoction.
