Recipe Notes
Sacch' Rest 154 degrees for 60 minutes.
Mashout at 178 degrees.
Add the Irish Moss with 15 minutes left to boil.
Pitch yeast at 55-60 degrees.
Fermentation: 10 days in primary at 55 degrees. 14 days in secondary at 50 degrees. After Day 14 of secondary, drop temp by 2-4 degrees a day until 34 degrees. Hold at 34 degrees for 6 weeks (minimum).
