Mash water should be approx. 14 qts.
Mash either decoction (preferred) or step-infusion, starting with a dough-in @ 105°F for 20 minutes. Use a ferulic acid rest @ 111°F for 20 minutes followed by a conversion rest @ 152°F for 60 minutes. Mash-out for 5 minutes @ 170°F.
Sparge with 24qts water @168°F and pH 5.2. Boil 1 hour.
Ferment warm (70°F+) for 7 days in primary, then 14 days in secondary. Bottle condition using 5oz priming sugar.
