Mash at 152F for 60 min with 3.44 gal of water. After mashing, add 1.44 gal of 185F water. Stir and allow to rest for 5 minutes. Recirculate wort until it runs clear. Run off 3.5 gal of wort @ 1.063 SG.
After runoff, add 3.5 gal of 185F water. Stir and allow to rest for 5 minutes. Recirculate wort until it runs clear. Run off 3.5 gal of wort @ 1.018 SG.
Boil for 60 minutes.
If using a stir plate make a 1 liter yeast starter. If not using a stir plate, use 2 vials of yeast.
Ferment at 65F in the primary for 7 days.
Add 4lbs. of watermelon puree/juice to secondary and rack on top of puree. Fermentation may start again and keep in secondary for 2 weeks at 65F.
