Recipe Notes
Brew in a Bag All-grain sour beer. 2-6 month secondary fermentation. Do not boil full wort.
1 gallon + 1 pint water in a (bag-lined) 4 gallon stock pot. Heat to 160. At 160, slowly add grains while stirring. Temp should drop to 150, hold there. Once all grains are in, stir 2 minutes and remove 3 pints of mash mixture for decoction. Try to get representative liquid/solid ratio. Add hops to decoction, bring to boil in saucepan and hold at boil 15 minutes. If foam develops, discard foam. Add entire decoction mix back to mash.
In separate container, heat 2 gallons water to 185. (for mash-out)
After 60 minutes total mashing, add 2 gallons 185 water to mash and stir. Liquid should be at 170 after addition.
Lift bag and drain 5-10 minutes. Remaining liquid should be about 2.5 gallons. Do not boil. Cool to 80, transfer to primary, add yeast and lactobac. Primary 3-7 days at ale temp, secondary 2-6 months at ale temp. Sample often to monitor flavor development. Bottle condition or keg when desired taste is achieved.
