Recipe Notes
Mash @148F for 60 minutes. Sparge @170. Boil for 2 hours. Cool to 65 and pitch yeast. Pitch Brett yeast once Lambic yeast has run it's course. Ferment with Brett for 2 years. Rack into secondary after 2 years onto 5lbs. fresh cherries. Allow to sit for another 6 months. Bottle and age for another year.
