Mash schedule:

Infuse @ 130 for protein rest

Decoct and raise to 150 for saccharification

Decoct and raise to 170 for sparge

Boil for 90 minutes.

Instead of using candi sugar, try replacing it with something more unique (like jaggery, honey, palm sugar, or home-made cooked sugars).
