Fruit Lambic - Extract

Ferment for 3 days in the primary with the Nottingham Ale Yeast. Then transfer off the trub/sediment into another primary vessel. Add Wyeast Lambic Blend yeast and boiled oak chips into the primary. Let age in Primary for 6-9 months. Rack onto 6 pounds of raspberry puree into secondary fermenter. Let sit on fruit for 3 months. Bottle like normal (may require additional tsp of dry yeast at bottling time).
