A few days before brewing - activate the yeast and set at 70-80 F.
The day before brewing - create a starter with 1/2 cup the dark DME,1 pint of water, and a few of the hop pellets. Pitch the yeast and incubate for at least 24 hours.
Brew day - steep grains for 45 minutes at 168 F. Remove steeping grain, bring to boil and add remaining DME and LME. Boil time = 60 minutes. Add hops according to recipe. After boil, Cool to 56 F, aerate (take hydrometer reading if curious) and pitch starter.
Ferment at 46-56. After primary fermentation ends, transfer to secondary and lager, gradually decreasing temperature to 35-40 F. Lager for at least 4 weeks.
