Recipe Notes
Mash 151*F for 75 minutes. Boil 90 minutes. Primary fermentation 21 days at 65*F using a 2L starter. Secondary fermentation with dry hops 21 days.
This recipe has won several awards and is a house favorite. It is similar to Avery's Maharaja.
A tsp. or two of gypsum is recommended in the mash if your water is relatively hard and low in sulfate.
